(In case you forgot, it’s pronounced like “ah-hoy”. J in the Slovak language reads like Y. )

Well, guess what I have for you guys today, an easy peasy but super-yum avocado salad/spread recipe. Now I must confess that when I was small I HATED avocado. I found it just slimy and ugh. My mom and sisters loved it, especially with rice and stew, but I wasn’t having any of that. Now that I think about it, how much I missed! All that yummy goodness I could have teased my taste-buds in! Thankfully I’ve seen the light, and it is one of my favourite foods today.
Now how did that turnaround happen?? In Togo, of all places! Avocado spread with fresh crispy baguette (what we call tea-bread in Ghana) was sold in every corner and I was soon persuaded to try some. *And then there were butterflies and rainbows and angels singing “haaaallelujah, haaaallelujah, halleluja, hallelujah, halleeelujah”.*
Yeah seriously, it was that good. I fell completely in love and haven’t looked back since. Thankfully, everyone here loves it, but I can safely declare it a staple in this household. I’m sharing one of my avocado salad/ spread recipes with you today, in the hopes that if you don’t already, you’ll add this superfood to your diet. (Rightly called a superfood, y’all, just read this here, about its anti-inflammation benefits, boosting digestion and cognitive function, cancer-preventing qualities, etc).
This is also a great alternative to margarine with bread.
the ingredients I use
- avocado (duh)
- fresh ripe tomatoes
- onion or spring onion
- sweet pepper (just because we had some at the time and it’s delicious in it. Fresh green pepper is ah-mah-zing with it too!)
- pinch of salt
- olive oil
I cut the avocado in two, then I use a spoon to scoop the nice yummy part out of its outer covering and then either cut it into chunks (for the salad), or mash it into a mushy paste (for the spread). This was a salad so I just cut it into small chunks.
Then cut the tomatoes, sweet pepper, and spring onion into small dices.
Mix all the ingredients.
Drizzle the olive oil and sprinkle the salt over it.
Mix everything well with a spoon or ladle.
